"Babylon Blue"

Our Choice Oyster is named the "Babylon Blue" named for it's 

species of the bluepoints that were founded in The Great South Bay

in the 1800's.

This species of oyster became a favorite of Queen Victoria.

TASTE

It has a consistently fresh, crisp, firm texture, with a sweet aftertaste that sparkles with salinity.

Currently we use  the "Flow N Grow™" Floating Oyster Cage manufactured by the Ketchum Supply Company.

CULLING, SORTING AND

TUMBLING TO PERFECTION

100% hands on sorting oysters by shape and size.  Our oysters have beautiful shapes for presentation, strong shells, easy to find hinges, and of course, deep cups filled with meat.  All of these steps and our hand made tumbling machine seen here produces the "Choice" Oyster for your restaurant.
